I was struggling just like you at first and was content to just quit, until I asked reddit their opinion and someone told me all this stuff and it literally made a world of difference. Don't quit, because the game is marvelous and a great experience. When you get points for a weapon, read over the things you can unlock, practice them, etc. Toughness helps you not get staggered and defense.
If you're having a lot of trouble dying, try adding the toughness and defense stats to your armor at the blacksmith. Practice this after each strike to get decent timing, and slowly learn to incorporate this into your attack combos because trust me, they are very doable mid combo. The trick is to wait until the blue sparkles move onto your character and then r1. Again, go to the dojo training mode and practice. I know you said you were having issues with it. At lower levels that stuff makes a huge difference. That way you'll be able to take a hit without getting slaughtered. As a beginner I would suggest you wear medium to heavy armor without going above 70% when it makes you slow. It's got decent range and damage, and isn't super slow like you might imagine. Odachi is a great option for someone just starting. Some weapons are genuinely better for beginners. Go to the training ground and practice each attack in each stance until you have a firm understanding of how each of those attacks effect the different types and sizes of enemies. Next, don't assume fast attacks are the best option, don't assume strong attacks are the best option. It takes some getting used to reacting quickly, but learn to block. You'll just eat the damage unless you block. If you get hit and staggered there's no dodging. If you came from souls you're probably used to dodging and poking in a methodical fashion. I felt like it was too fast, BUT I would entreat thee to not give up just yet.
1st character I played was over 300 deaths before the end of chapter 1. Theres a few things that helped me with these games.
